Nectarine, Goat Cheese and Almond Salad

- 4 romaine lettuce(jumbo, hearts chopped about 12 cups)
- 3 nectarines(ripe, pitted and sliced 14 inch thick)
- 1 red onion(thinly sliced)
- 4 ozs fresh goat cheese(crumbled)
- 12 cup slivered almonds(toasted)
- 2 tbsps red wine vinegar
- 1 tsp dijon mustard
- salt
- pepper
- 14 cup vegetable oil
- 14 cup olive oil
