Nectarine, Goat Cheese and Almond Salad

Ingredients

  • romaine lettuce(jumbo, hearts chopped about 12 cups)
  • nectarines(ripe, pitted and sliced 14 inch thick)
  • red onion(thinly sliced)
  • 4 ozs fresh goat cheese(crumbled)
  • 12 cup slivered almonds(toasted)
  • 2 tbsps red wine vinegar
  • 1 tsp dijon mustard
  • salt
  • pepper
  • 14 cup vegetable oil
  • 14 cup olive oil
