Herb Goat Cheese Stuffed Mini Bell Peppers

Ingredients:   About 20 mini bell peppers (ends and seeds removed) 8 oz goat cheese (room temperature) 1 egg yolk (room temperature) 2 tablespoons scallions (thin sliced) 1 tablespoon fresh tarragon (fine mince) 1 teaspoon fresh thyme (fine mince) 1 teaspoon sugar Salt and fresh ground pepper to taste Directions:   Preheat oven to 375° F Line a large baking sheet with parchment or silpat Cream together cheese and egg yolk and sugar Fold in chopped herb mixture and season with salt and pepper Transfer cheese mixture to a plastic bag or pastry bag, and cut off the tip Pipe...

Ingredients 1 lb gemelli or penne 2 3/4 lb cherry tomatoes, halved 5 to 6 oz soft mild goat cheese, crumbled 2/3 cup coarsely chopped Kalamata or other brine-cured black olives 3/4 cup torn fresh basil leaves Preparation Cook pasta in a 6-quart pot of boiling salted water until just tender, then drain. Angel  Hair  Pasta

No fancy name for the dish, but that is Eichers Artisan Plain Goat Cheese with angel hair pasta, basil, Swiss chard, garlic, olive oil and fresh ground pepper. No leftovers worth mentioning.A note for preparing dishI shredded the Swiss chard and cooked it for maybe 2 minutes in chicken broth, added olive oil and cooked pasta (I always make extra when making spaghetti), cooked another minute to warm, then added shredded basil and cheese and seasoned to taste.
