Ingredients 3 handfuls of mixed green lettuce 10 strawberries, tops removed and sliced 1 small container of goat cheese 1 egg 1 cup freshly made bread crumbs 1/2 cup grapeseed oil 1/2 cup olive 1/4 cup balsamic vinegar 1 tsp honey 1 tsp salt 1 tsp pepper Preperation In a large bowl, toss together the lettuce and strawberries. Avocado and Goat Cheese on Toast

Ingredients 2 slices bread (sourdough preferred) 1 avocado 12 lime (juiced) 2 tsps chopped fresh mint 60 grams goat cheese (or feta) olive oil salt pepper Preparation Toast your bread. While it’s in the toaster, halve, pit and peel your avocado and scoop out the flesh with a spoon then pop it in a bowl. Mash the avocado with a fork and mix in the lime juice and mint. Crumble your cheese and fold it into the avocado mixture, leaving some bits chunky. Spread the avocado mixture onto your toast and top with salt, pepper and a drizzle of olive oil.
